Naengmyeon is a food that you will enjoy eating all year long despite hot or cold temperatures. However, itโs definitely most popular in summer and on refreshing Spring days. Naengmyeon is delicious and refreshing Korean cold noodles. Yes! Believe it or not, the main attraction of this dish is that it is served completely cold. Do you want to know how to prepare it? Ingredients

300 grams of noodles
Water
Seaweed
6 shiitake mushrooms
Fish sauce
1 cucumber
100 grams of kimchi
kimchi broth
2 Korean pears
fermented chili sauce
Garlic
Vinegar
Sugar
Salt
Ground Chili
Step-by-Step Preparation
To start the recipe, you must prepare the broth, to do this, place a pot over medium heat with enough water and add a handful of shiitake mushrooms, along with the seaweed. Cook for 20 minutes and then pour in half a cup of fish sauce. Mix well, cover, and cook for another 10 minutes.
After the time has elapsed, remove it from the heat, allow it to rest a bit, and then take it to the refrigerator for about 2 hours.
Minutes before removing the broth from the refrigerator, proceed to cut the cucumber into strips that are neither too thick nor too thin, then place them in a container and add 2 tablespoons of vinegar, 1 teaspoon of sugar, 1 teaspoon of salt, and ยฝ teaspoon of chili. Make sure you mix all the ingredients very well.
It is time to cut the pear into small strips and place it in another separate container, then add in enough water to cover them and 1 teaspoon of sugar.
In another container, mix the fermented chili sauce or Kimchi together with the grated garlic.
To prepare the noodles, they are placed in a pot over medium heat with enough water, add salt to taste and cook for about 4 minutes. After the time has elapsed, remove it from the heat and let it rest for a bit and then place the pot under the tap and add cold water. Then strain and drain.
The final step will be to serve the noodles in individual dishes, then add the ice broth, and all the ingredients previously prepared, and the recipe will be ready.
Tips

You can add a boiled egg to the final presentation, and if you want it even colder you can choose to add crushed ice to the broth.
Sesame seeds or sesame oil will be an excellent option if you are looking to add a touch of flavor to the recipe.
For the broth, you can also add 1 teaspoon of soy sauce or a ยผ of grated ginger, as well as replace the sugar with honey. You can accompany the dish with a little vinegar and spicy mustard.

Originally Naengmyeon was a cold dish that was served in winter in North Korea. Traditionally, Koreans ate cold foods in winter and hot foods in Summer, as they believed it was healthy to align body temperature with the environment. However, it has now become a recipe to prepare during hot times, since beliefs are changing.
An interesting fact is that traditionally the noodles used in this recipe were handmade, made from Kudzu flour, and served in a steel bowl with the other ingredients.
