Today I’d like to bring you a comfort food of mine and a Korean favorite! It’s a very easy recipe that you can make at home to feel a little closer to Korea: Kimchi Fried Rice (김치볶음밥). This dish came from taking advantage of leftover kimchi soup broth by adding rice and frying it all together. But what if I can’t make that soup? Well, here is a fairly easy way to make it from scratch! Here we go!
Meat (pork, beef, sausage, spam, etc)
Red Pepper Paste (Gochujang)
Remember that Korean cooking doesn’t normally require exact measurements. Add more or less depending on your personal tastes and how much you intend to make.
How to Make Kimchi Fried Rice
1)Chop the spring onion and meat.
2) Put some oil in a pan and add the meat. When it begins to brown, add the spring onion.
3) After a while, add in chopped kimchi and stir, trying not to burn or stick. The kimchi can be in large chunks, or diced into very small pieces, depending on your preference. Do you know about the juice that kimchi leaves in jars? Throw it in too!
4)Now it is time to spice it up, add in a bit of soy sauce. Remember, everything depends on your taste: if you don’t want it very spicy, add a little sugar. If, on the other hand, you want it spicier, add any hot sauce you have – a spoonful of gochujang is also fine.
5)When you see that everything is well mixed, add the rice and integrate it into the mixture.
6)Finally, fry an egg and put it on top, it will give it a perfect touch. Or, scramble it in!
Pro tip 1: To bring out a little more Korean flavor, mix the rice with a little sesame oil. It’s not an easy ingredient to find in some countries, so you can skip this step if you don’t have any.
Pro tip 2: if you want to show off, sprinkle some crumbled seaweed and sesame seeds on top to decorate.
It is not very difficult right? Another option, if you don’t have access to fresh kimchi is to take advantage of leftover soup from Korean ramen. You can fry up some rice, adding in a bit of the broth and some meat to get something similar. It is not the same, but at least there will be no food waste.
